Southwest Corn Chowder (Vegan!)

This creamy, zesty chowder features sweet corn, potatoes, fire-roasted peppers, green chiles, and southwest-style flavors. It's slightly smoky, warmly spiced, and deliciously cheesy!

Ingredients

  • 1 yellow onion
  • 5 cloves garlic
  • 2 jalapeno pepper
  • 1 lb. potato red
  • 2 cups vegetable broth
  • 2 cups dairy-free milk (plain, unsweetened)
  • 3.5 cups sweet corn
  • 2 red bell pepper fire-roasted
  • 4 oz. diced green chiles mild or medium, canned
  • 2/3 cup nutritional yeast
  • 2 tsp. smoked paprika
  • 2-3 Tbsp. cilantro optional, fresh

Instructions

  1. Cut potatoes into small, bite-sized cubes (about ⅔-inches each). Set aside.
  2. Dice onion. In a large stockpot over medium-high heat, sauté onion for 7-8 minutes. (I use 3 Tbsp. water/broth for no-oil sauté method, adding more as needed.)
  3. Meanwhile, mince garlic and jalapeño peppers (seeds removed).
  4. Add garlic, jalapeño, potatoes, and smoked paprika to pot. Cook 3-4 minutes, stirring occasionally.
  5. Add broth, milk, sweet corn, roasted bell peppers (diced), green chiles, and nutritional yeast.
  6. Bring to a light boil. Then cover, reduce heat, and simmer for 15-20 minutes or until potatoes are tender.
  7. Leave as is, or blend some for a creamier texture. (I like to blend about half with an immersion blender.)
  8. Roughly chop cilantro and add to pot. Salt & pepper to taste if desired.

Notes

  • Nut-free: To keep this recipe nut-free, use a nut-free milk like soy milk. Just be sure your milk is plain & unsweetened.
  • Make it spicy or mild: Adjust as desired or somewhere in between. For spicier, use more jalapeño, medium green chiles, add cayenne pepper, or top with hot sauce before serving. For less spicy, only use one jalapeño and mild green chiles.
