Southwest Quinoa Salad
This Southwest Quinoa Salad is loaded with flavor from tomatoes, black bean, corn, cilantro and a simple dressing of lime juice and Mexican seasonings.
Ingredients
- 1 cup quinoa measured dry and then cooked
- 15 oz black beans rinsed & drained or 2 cups of dried cooked black beans, canned
- ½ cilantro chopped, bunch
- 3-5 green onion also good with red onion, sliced
- 1 pint cherry tomato halved
- 1 cup corn thawed, frozen
- 2 avocado diced
- 2-3 tablespoons olive oil
- lime juice juice of two limes or 4 tablespoon bottled lime juice
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- black pepper to taste
Instructions
- Mix all ingredients together.
- Refrigerate for at least 2 hours but it is even better after several hours to overnight.
