Ingredients
- 2 cans white albacore tuna
- 1/2 yellow pepper
- 12 olives
- 12 cherry tomatoes
- 4 Tablespoon cilantro
- 1/2 cup black beans
- 3 green onions
- 1/3 cup plain greek yogurt
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon chili powder
- 1/4 teaspoon ground pepper
- 1/4 teaspoon hot sauce
- 1 Tablespoon lime juice
- 8 corn tortillas
Instructions
- Chop the yellow pepper, olives, and green onions.
- Cut the tomatoes into quarters.
- Drain the tuna and mix it with the yellow pepper, olives, tomatoes, cilantro, green onions and black beans and stir.
- To make the dressing combine the greek yogurt and lime juice with all the spices and mix well.
- Roll up in corn tortillas and serve.
