Souvlaki

Souvlaki (σουβλάκι) is a popular Greek dish made from small pieces of pork, chicken or beef that are traditionnally grilled on a barbecue.

Ingredients

  • 2 lb pork tenderloin (or beef tenderloin)
  • 1 onion
  • 5 sprigs rosemary
  • 4 sprigs thyme
  • 3 cloves garlic , chopped
  • 5 tablespoons of olive oil
  • 10 teaspoons white wine vinegar (incl. 5 teaspoons for the marinade)
  • 1 pinch coarse salt
  • pepper
To serve
  • 2 large tomatoes , sliced
  • 3 scallions , cut into strips
  • A few pita breads
  • Tzatziki sauce

Instructions

  1. In a bowl, pour five tablespoons of white vinegar and crumble 2 sprigs of rosemary and 2 sprigs of thyme.
  2. Dip the wooden skewers in this marinade for 1h30, so that they do not burn while the meat cooks and they release a great aroma.
  3. Using a sharp knife, remove all the white membrane that covers the top of the pork (or beef) tenderloin. This step is very important, otherwise the souvlaki would remain hard.
  4. Cut the meat into small equal size 1-inch (2,5 cm) thick pieces.
  5. Place the meat in a salad bowl and reserve at room temperature for 30 minutes.
  6. Quarter the onion. Separate the layers and add them to the meat.
  7. Crumble the remaining rosemary and thyme and add.
  8. Add 5 tablespoons of olive oil, 5 tablespoons of white wine vinegar, garlic, salt and pepper.
  9. Let stand in the refrigerator for 30 minutes.
  10. Preheat the grill or barbecue.
  11. Thread the pieces of meat on the wooden skewers by inserting 2 or 3 pieces of onion in between the meat pieces.
  12. Place them on the barbecue and grill until the meat is cooked and browned.
  13. Serve with grilled pita bread, onions, tomatoes, fries and tzatziki sauce.
