Soy Egg

A soy egg is an egg that is boiled, then peeled, before being marinated in a mixture of soy sauce and other ingredients.

Ingredients

For the eggs
  • 8 egg large
  • 1 pinch salt
  • water
For the marinade
  • 1 tablespoon Chinese five-spice powder
  • 1 quart water
  • ½ tablespoon sugar
  • ¾ cup soy sauce low sodium
  • 2 tablespoons rice vinegar

Instructions

Marinade

  1. In a small saucepan, combine the water, soy sauce, rice vinegar, sugar and Chinese five spice powder.
  2. Bring to a boil and simmer for 10 minutes over low heat.
Eggs
  1. Half fill a large saucepan with water and bring to a boil over high heat. Add a pinch of salt.
  2. Using a large spoon or ladle, very carefully immerse the eggs in the boiling water and immediately reduce the heat.
  3. Cook the eggs over low to medium heat for 6 minutes.
  4. Transfer the eggs to a bowl of cold water and carefully peel them once their shells have cooled.
  5. Add the peeled eggs to the marinade, and let them marinate for up to 15 hours in a cool place or in the refrigerator. Turn them regularly so that the coloring is uniform.
  6. Cut the eggs lengthwise and serve with rice or noodles.

Notes

  • When the eggs have just been added to the marinade, the eggs are floating on top of the marinade. Do not press them. The eggs absorb the marinade and sink later.
