Soy Ginger Chicken

Soy Ginger Chicken is marinated boneless chicken thighs in a mixture of soy sauce, brown sugar, olive oil, fresh ginger, lime juice, garlic, and sriracha. Grilled until browned and cooked through, this chicken is garnished with chopped green onions and cilantro for fresh, aromatic flavors.

Ingredients

  • 1/3 cup soy sauce or Tamari for gluten-free, lite
  • 1/4 cup brown sugar packed
  • 2 tablespoons olive oil
  • 1 tablespoon ginger freshly grated
  • lime juice of 1
  • 3 cloves garlic minced
  • 1 teaspoon sriracha or more if you want it spicy
  • 2 1/2 pounds chicken thigh can use chicken breasts or drumsticks, boneless
  • salt to taste
  • black pepper to taste
  • green onion for garnish, sliced green onions, chopped cilantro

Instructions

  1. First, make the marinade. In a medium bowl, whisk together the soy sauce, brown sugar, oil, ginger, lime juice, garlic, and Siracha.
  2. Pour the marinade in a reusable freezer bag with the chicken. Press out the air and seal shut. Place the bag in a bowl and refrigerate for at least 1 hour or overnight.
  3. Preheat the grill to high heat. Carefully brush the grill grates with oil to prevent the chicken from sticking. Place the chicken on the hot grill and discard the marinade. Cook for 5 to 7 minutes per side, until browned and cooked through, the internal temperature should be 165 degrees Fahrenheit.
  4. Transfer the chicken to a platter and garnish with sliced green onions and cilantro. Serve warm.

Notes

  • Marinate chicken overnight for deeper flavor and tender texture.
  • Use a grill pan indoors if an outdoor grill is unavailable.
  • Adjust cooking times if using chicken breasts or drumsticks instead of thighs.
  • Store leftovers in an airtight container refrigerated for up to 3 to 4 days.
