Spanakorizo

Spanakorizo ​​(σπανακόρυζο) is a popular Greek vegetarian dish prepared with spinach and rice. It the Greek version of rice pilaf.

Ingredients

  • 2 lb fresh spinach
  • 2 onions , finely chopped
  • ¾ cup long grain rice
  • ½ teaspoon cumin
  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1½ cup water
  • 1 bunch fresh dill , roughly chopped
  • 2 tablespoons grated scallions
  • 4 tablespoons tomato paste
  • salt
  • black pepper

Instructions

  1. Wash the spinach thoroughly and cut part of the stems if necessary.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat and sauté the onions until translucent.
  3. Add the spinach, cumin, dill and the scallions. Season with salt and pepper. Mix well.
  4. Then add the vinegar and the water.
  5. Stir again, then add the tomato paste.
  6. Add the rice, and the remaining olive oil. Mix well.
  7. Bring to a boil over high heat, then reduce the heat and simmer over medium-low heat for about 20 minutes, stirring regularly.
  8. Serve hot, warm, or cold.
