Spanish Beef and Rice Skillet
Easy Spanish Beef and Rice Skillet is a quick hearty skillet meal with tender rice and ground beef simmered in a flavorful tomato sauce.
Ingredients
- 1 pound ground beef
- 1 cup onion , chopped
- 1/2 cup green pepper , chopped
- 1 garlic minced, clove
- 1 tablespoon chili powder
- 32 ounces tomato juice
- 1 cup long grain rice uncooked
- 1/2 teaspoon salt
Instructions
- In a skillet, brown ground beef; drain.
- Stir in the onion, green pepper, garlic, and chili powder.
- Cook and stir until the vegetables are tender.
- Stir in remaining ingredients; bring to a boil.
- Reduce heat; cover and simmer for 20-30 minutes or until the rice is tender and most of the liquid is absorbed.
