Ingredients

  • 1 pound ground beef
  • 1 cup onion , chopped
  • 1/2 cup green pepper , chopped
  • 1 garlic minced, clove
  • 1 tablespoon chili powder
  • 32 ounces tomato juice
  • 1 cup long grain rice uncooked
  • 1/2 teaspoon salt

Instructions

  1. In a skillet, brown ground beef; drain.
  2. Stir in the onion, green pepper, garlic, and chili powder.
  3. Cook and stir until the vegetables are tender.
  4. Stir in remaining ingredients; bring to a boil.
  5. Reduce heat; cover and simmer for 20-30 minutes or until the rice is tender and most of the liquid is absorbed.
