Ingredients

  • 650 grams pork spareribs
  • 540 grams daikon (peeled and cut into 1-inch thick rounds)
  • 8 cups dashi stock
  • ½ cup sake
  • 2 tablespoons soy sauce
  • 2 teaspoons salt
  • 1 teaspoon cane sugar evaporated
  • 6 egg hardboiled
  • 260 grams atsuage (thick fried tofu)
  • 300 grams konnyaku
  • 500 grams nerimono Japanese fish cakes, assorted

Instructions

    Cup of Yum
  1. Bring a large pot of water to a boil. Add the spareribs and daikon and cook for 15 minutes.
  2. Drain the spareribs and daikon and wash out the pot. Rinse the pork and daikon and return just the pork to the pot. Add the dashi, sake, soy sauce, salt and sugar to the pot, partially cover with a lid and gently simmer for 1 hour.
  3. While the pork is simmering, hard boil the eggs, and slice and twist the konnyaku as shown.
  4. After the spareribs have cooked for an hour, return the daikon to the pot, along with the boiled eggs, fried tofu and konnyaku.
  5. Continue simmering until the pork is very tender (another 30 minutes to 1 hour).
  6. Add the nerimono and cook until heated through and tender (about 10 minutes).
  7. Serve hot, covered with some of the broth. Oden tastes best when made the day before and left to rest in the refrigerator overnight before being reheated.
