Ingredients
Blueberry Elderflower Syrup
- 115 g blueberries 4 oz
- ¼ cup lemon juice juice from 1 - 2 lemon(s)
- 60 mL elderflower cordial ¼ cup (add an extra 1 tbsp for a stronger flavor)
Sparkling Blueberry Elderflower Sour
- 44 mL blueberry elderflower syrup 1 jigger
- 44 mL whiskey 1 jigger (I used Tennessee whiskey)
- 30 mL egg 2 tbsp, white
- lemon juice optional, a few drops, extra
- prosecco of your choice, to top, chilled
- ice
Instructions
Blueberry Elderflower Syrup
- Place the blueberry and lemon juice in a saucepan. Heat to bring the lemon juice to a simmer and to soften the blueberries (10 - 15 minutes).
- Strain the blueberries through a sieve. Use the back of a spoon to crush the blueberries (to get as much of the juice as possible).
- Mix the blueberry lemon juice with ¼ cup (4 tbsp) of elderflower cordial. Add more if you prefer a sweeter cocktail.
- Let the syrup cool down and store in the fridge until needed.
Sparkling Blueberry Elderflower Sour
- Mix the blueberry elderflower syrup, whiskey and egg whites in a cocktail shaker. Add some extra lemon juice if you prefer.
- Shake the cocktail mixer vigorously (without ice), to create the foam. Add ice cubes and shake for another 8 - 10 seconds to chill the cocktail.
- Strain the cocktail into two champagne glasses, and top up with prosecco.
