Ingredients

Cake Batter
  • 195 gms flour sifted, 1 ½ cups
  • 2 tsp baking powder sifted
  • ¼ tsp salt
  • 113 gms unsalted butter at room temperature, ½ cup
  • 200 gms granulated sugar 1 cup
  • 1 tbsp vanilla extract
  • 2 egg separated, large, at room temperature
  • 120 ml milk ½ cup, whole
  • ¼ tsp cream of tartar
Topping
  • 55 gms butter cut in small pieces, unsalted
  • 160 gms dark brown sugar ¾ cup
  • ½ tsp cinnamon powder
  • 1/8 tsp ground nutmeg
  • ground cloves a dash, pinch
  • ¼ tsp vanilla extract
  • 2 banana peeled, strings removed, sliced diagonally - 0.6 cm or 1/4 inch thick, large, ripe but firm
