Spiced Clementine Cake

Ingredients

  • 1½ cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp ginger
  • ½ tsp allspice
  • ½ tsp cardamom
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • ¾ cup white sugar
  • 2 eggs, room temperature
  • ½ cup freshly squeezed clementine juice
  • 1 tbsp clementine zest

Instructions

  1. Preheat oven to 350 degrees. Coat an 8 x 8 baking dish with cooking spray.
  2. Combine the flour, baking powder, cinnamon, baking soda, ginger, allspice, cardamom and salt together in a bowl; mix well. 
  3. In a separate large bowl, whisk together the melted butter and white sugar until well combined.
  4. Add the eggs and whisk.
  5. Add in the fresh clementine juice and zest then whisk until well combined. 
  6. Gradually add the flour mixture to the wet ingredients and mix until incorporated. 
  7. Pour the cake batter in the prepared baking pan and bake for 30-35 minutes, or until a tester inserted in the center comes out with very little crumb. Remove from the oven and allow the cake to cool completely. 
  8. When ready to serve, sprinkle the top with powdered sugar then slice. Serve with whipped cream on top, if desired. Enjoy.
