Spiced Pecans
Spiced Pecans are pecan halves coated in a mixture of sugar, cinnamon, nutmeg, allspice, cloves, and salt, bound with egg white and water, then slow-baked to develop a crunchy, caramelized coating. Baking at a low temperature ensures even toasting and preserves the pecans’ natural richness while the warming spices provide a balanced savory-sweet taste. These pecans serve well as a snack on their own, a salad topper, or a garnish for desserts and cheese plates.
Ingredients
- 3/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon cloves ground
- 1 egg white
- 2 1/2 tablespoons water
- 8 cups pecan halves
Instructions
- Preheat oven to 275 degrees.
- Combine sugar, all the spices, water, and egg white in a bowl and mix well.
- Add pecans and stir until they are well coated.
- Spread out coated pecans on a lightly greased foil lined jelly roll pan or baking sheet.
- Bake at 275 degrees for 50 to 55 minutes, stirring every 10 minutes. (Keep an eye on them in case your oven cooks hot and they take less time. They will lightly brown, but you don't want them to get too dark.)
- Remove the pecans from the baking sheet and spread them out on waxed or parchment paper to cool.
- When the pecans have cooled, store them in an airtight container.
