Ingredients

Ham
  • 1 (5-7 pound) fully cooked boneless ham
  • ¼ cup brown sugar
  • 1 teaspoon Coriander
  • 1 teaspoon cinnamon
  • ½ teaspoon cumin
  • ¼ teaspoon allspice
  • ¼ teaspoon pepper
  • 1 (20-ounce) can drained pineapple rings
  • ¼ cup drained maraschino cherries
  • Toothpicks
  • ¼ cup water
Pineapple Glaze
  • ½ cup pineapple juice
  • ½ cup brown sugar
  • ¼ cup Dijon mustard
  • 1 tablespoon Worcestershire sauce 

Instructions

  1. Adjust the oven rack in the lower 3rd of the oven then preheat the oven to 325 degrees Fahrenheit. Prepare the roasting pan by inserting a roasting rack inside the pan. Place 1 (5-7 pound) fully cooked boneless ham inside the roasting pan on the rack.
  2. Mix ¼ cup brown sugar, 1 teaspoon coriander, 1 teaspoon cinnamon, ½ teaspoon cumin, ¼ teaspoon allspice, and ¼ teaspoon pepper in a small bowl.
  3. Place the ham inside the roasting pan on the rack then rub the spice mixture thoroughly over the ham.
  4. In a small saucepan whisk the ½ cup pineapple juice, ¼ cup Dijon mustard, ½ cup brown sugar, and 1 tablespoon Worcestershire sauce. Heat over medium-high heat until the mixture melts and slightly thickens.
  5. Baste half of the pineapple glaze all over the ham. Set aside the remaining glaze for later.
  6. Place pineapples from 1 (20-ounce) can drained pineapple rings on top of the glazed pineapple. The pineapple will stick to the glaze, but you can use toothpicks to help secure the pineapple. Use a toothpick to secure a cherry from ¼ cup drained maraschino cherries in the middle of each pineapple ring.
  7. Pour ¼ cup water into the bottom of the pan. Bake uncovered for 1 hour or until the internal temperature of the ham reaches 140 degrees Fahrenheit. The ham is already fully cooked, you just want it to be warmed through.
  8. Take the ham out of the oven and brush it with the remaining pineapple glaze. Set the oven to broil and place the ham back in the oven. Broil the ham for 2-4 minutes or until the glaze caramelizes on top. Remove the ham from the oven and let it rest for a few minutes before serving.
