Ingredients

  • 1 large sweet potato
  • 2 tablespoons (30 milliliters) olive oil
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon potato starch or cornstarch
  • 1/2 teaspoon sea salt
  • Pinch freshly ground black pepper
Dipping Sauce:
  • 2 tablespoons (30 milliliters) Dijon mustard
  • 1 tablespoon (15 milliliters) maple syrup
  • Pinch salt
  • freshly chopped parsley for garnish

Instructions

  1. Preheat the oven to 425˚F (220˚C) and line a baking sheet with parchment or lightly grease.
  2. Slice the sweet potato into fries, about 1/2 inch (1.25 centimeters) thick. Toss well with the olive oil.
  3. In a medium bowl, mix together cardamom, cinnamon, black pepper, and potato starch (or cornstarch). Toss the oiled sweet potato fries with the spices until each piece is evenly coated.
  4. Place the coated sweet potato fries in a single layer, not touching, on the prepared baking sheet. Bake in preheated oven until bottoms are golden, about 15 minutes.
  5. Flip and cook on the other side until crisp and golden, 10-15 minutes.
  6. Sprinkle the fries with salt and parsley.
To make the Maple Mustard Dipping Sauce:

  1. In a small bowl, whisk together the Dijon mustard and maple syrup until smooth. Stir in a pinch of salt if desired. Adjust seasonings to taste.
  2. Serve the hot sweet potato fries immediately with the maple mustard dipping sauce.
