Ingredients

  • 1 pound ground beef , (85/15)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper coarse ground
  • 1 yellow onion , chopped
  • 4 russet potato cut into 1/2" cubes
  • 8 ounces tomato sauce
  • 4 cups beef broth
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoons chili powder

Instructions

  1. Add oil to a large pot or dutch oven on high heat.
  2. Add ground beef, onion, salt, and pepper, breaking it apart as you cook it until browned, about 6-8 minutes.
  3. Add in the tomato sauce, beef broth, cayenne pepper, and chili powder and stir well.
  4. Add in the potatoes and bring to a boil.
  5. Reduce to low heat and cook, uncovered, for 1 hour.
