Ingredients

  • 1 pound black beans rinsed and drained, dried
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 jalapeno pepper deseeded and diced
  • 1/2 /2 teaspoon red pepper flakes
  • 1 teaspoon cumin ground
  • 2 (16-ounce) cans diced tomatoes
  • 4 cups vegetable broth

  1. Add all of the ingredients to the slow cooker and set the timer for 8 hours on low. Check that the beans are tender and cook an additional 30 minutes until they reach the desired tenderness.
