Spicy Chicken Lime Soup

This spicy chicken lime soup is packed full of chicken, chorizo, black beans, tomatoes, and homemade roasted hatch green chiles. This soup is flavorful and perfect for summer.

Ingredients

  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breast diced
  • ½ pound cured chorizo sausage chopped, Spanish style
  • 1 medium yellow onion diced
  • 1 fresh Jalapeño seeded and diced
  • 2 cloves garlic minced
  • 2 teaspoons chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • 4 cups chicken stock more if needed
  • 2 (14 ounce) cans fire roasted diced tomatoes
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (4 ounce) can diced green chiles diced
  • ½ cup frozen corn kernels
  • 1 tablespoon lime juice fresh
  • ½ cup diced cilantro

Instructions

  1. In a large soup pot set over medium heat, add olive oil.
  2. Add in the diced chicken and chorizo. Saute until the chicken just starts to brown.
  3. Add the onion, jalapeno, garlic, chili powder, smoked paprika, and kosher salt. Stir to combine and cook until the onions become translucent in color, about 5 minutes.
  4. Add chicken stock, tomatoes, black beans, diced green chiles, and corn kernels.
  5. Simmer for 30 minutes, adding additional chicken stock if needed.
  6. Stir in lime juice and cilantro, and serve.
