Spicy Eggs and Tomato

Ingredients

  • 4 egg
  • 14 oz tomato canned
  • 1 onion golden
  • 2 Chili pepper fresh
  • ½ tsp chili flakes 1 dried chili pepper
  • salt
  • black pepper

Instructions

    Cup of Yum
  1. Finely chop the onion and fresh chili peppers.
  2. In a shallow pan, heat a tablespoon of oil over medium heat.
  3. Add the chopped onions, fresh chili, and dried chili.
  4. Sauté for a few minutes until the onions are soft.
  5. Add the canned tomato sauce.
  6. Season with salt and pepper.
  7. Cook for 5-6 minutes over medium heat to reduce the sauce and remove any excess water.
  8. Using a spoon, create small wells in the tomato sauce.
  9. Add the eggs and cook with the lid on for 3-4 minutes.
  10. Serve hot and enjoy!
