Ingredients
- 4 eggs
- 14 oz canned tomatoes
- 1 golden onion
- 2 fresh chili pepper
- ½ tsp chili flakes 1 dried chili pepper
- salt and pepper
Instructions
- Finely chop the onion and fresh chili peppers.
- In a shallow pan, heat a tablespoon of oil over medium heat.
- Add the chopped onions, fresh chili, and dried chili.
- Sauté for a few minutes until the onions are soft.
- Add the canned tomato sauce.
- Season with salt and pepper.
- Cook for 5-6 minutes over medium heat to reduce the sauce and remove any excess water.
- Using a spoon, create small wells in the tomato sauce.
- Add the eggs and cook with the lid on for 3-4 minutes.
- Serve hot and enjoy!
