Spicy Garlic Chili Oil Noodles Recipe

Make dinner in a flash with these garlicky chili oil noodles! In only 10 minutes, you can enjoy a spicy, savory meal of noodles tossed in a zesty chili oil sauce infused with garlic.

Ingredients

  • 4 oz udon noodles wheat noodles, egg noodles, or ramen noodles
  • 3 tablespoon vegetable oil or any neutral cooking oil
  • 3 garlic minced, cloves
  • 1 teaspoon chili flakes Korean or Sichuan chili flakes
  • 1-2 scallion chopped, greens
  • 1 teaspoon white sesame seeds
  • 1 tablespoon soy sauce
  • ½ teaspoon rice vinegar
  • ½ teaspoon brown sugar
  • ¼ teaspoon salt to taste
For garnishing
  • scallion chopped greens
  • white sesame seeds toasted

Instructions

  1. To make the dish, start by boiling the noodles of your choice according to the package instructions or until you like.
  2. Reserve 1 tablespoon of cooking noodles water to add to the sauce later. Then drain the noodles.
  3. Take minced garlic, chili powder, chopped green onion, and white sesame seeds in a heat-proof bowl.
  4. Heat oil in a pan or pot until it's smoking. Pour the hot oil over the aromatics and mix. Add reserved noodles water, soy sauce, vinegar, salt, and brown sugar, and mix.
  5. Add the hot noodles to the spicy sauce and mix until the noodles are well coated.
  6. Serve the spicy  noodles and garnish with a little bit of chopped scallions and toasted sesame seeds. You can even sprinkle some chopped cilantro and toasted peanuts if you wish. You can also add your choice of protein if you want.

Notes

  • Use fresh garlic: Fresh garlic has a stronger and more vibrant flavor than garlic powder or pre-minced garlic. Mince the garlic before adding it to the chili oil sauce.
  • Adjust the spice level: Depending on your preference, you can adjust the chili flakes to make the dish more or less spicy.
