Spicy Kimchi Garlic Noodles
Fresh noodles stir-fried with lots of garlic, chili oil, tangy kimchi, sliced scallions and a delectable soy/sesame sauce are combined to make Spicy Kimchi Garlic Noodles. A perfect side dish as-is, or add vegetables and your favorite protein for a complete meal.

Ingredients
- 3 tbsp soy sauce
- 1 tbsp hoisin sauce
- 2 tsp sriracha
- 1/4-1/2 tsp. sugar add more to suit your taste
- 1 1/2 tbsp sesame oil toasted
- black pepper several grinds
- pinch salt
- 2-3 tbsp. Chili oil
- 10 cloves garlic minced
- 2 yakisoba noodles fresh, 7 oz. packages, discard seasoning packet
- 1 1/2 kimchi roughly chopped, packed cups
- sesame seeds toasted
- 1/2 cup scallions sliced
Instructions
- In a small bowl, whisk together the soy sauce, hoisin, sriracha, sugar, sesame oil, pepper, and salt. Set aside.
- In a wok or large skillet, add chili oil and garlic. Sauté on medium/medium-high for about 2 minutes, stirring constantly so the garlic doesn't burn. Add the yakisoba noodles, using a utensil to loosen them up so they're no longer stuck together. Sauté the noodles for 2-3 minutes, then add the sauce and kimchi. Sauté for about 2-3 minutes or until everything is heated through. Mix in sesame seeds and scallions and serve immediately. Garnish with more sesame seeds and scallions sprinkled on top. Enjoy!
