Spicy Pork Noodle Bowl
This spicy pork noodle bowl is full of flavor and ready in 30 minutes. It's a quick and easy meal that will surely please the whole family! Spicy ground pork sautéed with Sichuan peppercorns and swimming in a delicious broth with baby bok choy and perfectly cooked noodles.
Ingredients
- 1 pound ground pork
- 3 cloves garlic minced
- 1 tablespoon ginger grated
- 1 tablespoon lemongrass paste
- 1 tablespoon Chili garlic sauce
- 1 teaspoon Sichuan peppercorn crushed and chopped
- ½ teaspoon cumin seeds muddled
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 tablespoon vegetable oil
- 6-8 cups chicken stock
- 4 cups baby bok choy thinly sliced
- 4 fresh green onions thinly sliced
- 2 tablespoons soy sauce low sodium
- 2 teaspoons fish sauce
- 1 teaspoon sriracha
- 12 ounces lo mein noodles cooked
Instructions
- In a medium-sized mixing bowl add ground pork, minced garlic, ginger, lemongrass, chopped Sichuan peppercorns, red pepper flakes, muddled cumin seeds, kosher salt, and black pepper. Mix until well combined.
- In a 5-6 quart pot (I used my Dutch oven) add vegetable oil and set over medium high heat. Once the oil is hot add in the ground pork and cook until the pork in no longer pink. Breaking up the pork while it cooks.
- Once the pork is fully cooked add in the chicken stock and simmer for about 10 minutes to help the flavors combine.
- After it has simmered add in the baby bok choy, sliced onions, soy sauce, fish sauce and sriracha. Simmer for another 5 minutes or just until the bok choy is slightly softened.
- Add cooked noodles to your serving bowl and pour the hot broth mixture overtop.
