Spicy Ramen Noodles

Spicy Ramen Noodles are prepared by cooking instant ramen noodles and then tossing them in a sauce made of butter, garlic, chili-based thecha chutney, soy sauce, and brown sugar. The dish is finished with a soft-cooked egg and garnished with scallions and seasoning like everything bagel mix or toasted sesame seeds, resulting in a flavorful, mildly spicy meal with a creamy texture from the noodle cooking water.

Ingredients

  • 1 instant ramen noodles spice packet not needed, pack
  • 1 tablespoon butter
  • 1 tablespoon garlic minced
  • 1 to 2 teaspoons thecha chutney or chili flakes
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • ¼ cup noodle cooking water starchy
  • Garnish
  • 1 tablespoon scallions diced
  • 1 teaspoon everything but bagel seasoning or toasted sesame seeds
  • sesame oil optional
  • 1 egg optional

Instructions

  1. Cook the ramen noodles according to the package directions. Do not overcook them, al dente noodles work the best. Reserve the starchy water.
  2. In a medium pan heat butter. Add garlic and saute for 30 seconds or until fragrant. Remember to not brown the garlic. Add the chutney and soy sauce. Mix well and cook on low heat for 30 seconds. Mix in brown sugar.
  3. Add the cooked noodles and mix well with a pair of tongs. Add the starchy water from the cooked noodles and cook for 2 to 3 minutes or until most of the water has evaporated.
  4. Move the noodles on one side and add an egg to the empty side of the pan. Cook the egg and then mix it in the noodles. Turn the heat off.
  5. Serve the noodles hot, garnished with scallions, and sprinkle everything but bagel seasoning or toasted sesame seeds.

Notes

  • Cook noodles al dente following package instructions to avoid sogginess.
  • Sauté garlic briefly without browning to retain flavor.
  • Kolhapuri Thecha chutney adds strong spice but chili flakes or other chili sauces like sriracha can be used as alternatives.
  • Reserve some noodle cooking water to mix into the sauce for creaminess and to prevent dryness.
  • Maggi noodles can replace ramen for a slightly different texture and flavor.
  • Enhance garnish creativity with fresh cilantro, extra hot sauce, chopped peanuts, or a squeeze of lime.
