Ingredients

  1. Sauté Aromatics: Heat vegetable oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic and ginger, cooking for 1-2 minutes until fragrant.
  2. Toast Spices: Add curry powder, cumin, turmeric, and chili powder to the pot. Stir for 1 minute to toast the spices and enhance their flavor.
  3. Add Lentils and Liquids: Stir in the lentils, diced tomatoes, coconut milk, and vegetable broth. Mix well and bring to a boil.
  4. Simmer: Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally, until the lentils are tender and the curry thickens.
  5. Season and Garnish: Adjust salt and pepper to taste. Garnish with fresh cilantro and serve with lime wedges for extra zest.
