Spicy Smashed Cucumber Snack with Goat Cheese
This refreshing cucumber snack combines the heat of spicy chili oil crisp with the coolness of smashed cucumbers and creamy goat cheese. Ready in just 5-minutes, it's a satisfying afternoon recipe!
Ingredients
- 2 cucumber mini
- Pinch sea salt or kosher salt, flakey
- 1-2 teaspoons chili crisp
- 1 ounce goat cheese crumbles
- cilantro for garnish
Instructions
- Smash Cucumbers: using the back of a Chef's knife, press down on the cucumber to smash it (as you would with garlic cloves). You can also use a large knife or just the palm of your hand. Cut the smashed cucumber into approximately 1-inch sections and break it apart as needed.
- Place the smashed cucumber pieces on a plate or small bowl and sprinkle with salt. Drizzle with chili oil and crisp and goat cheese. Garnish with fresh cilantro as desired.
