Ingredients
- 8 ounces low fat cream cheese room temperature
- 1 cup plain greek yogurt
- 2 cloves garlic minced
- 7 ounce jar roasted red peppers drained and diced
- 8 ounces frozen spinach defrosted and squeezed to remove excess liquid
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 4 ounces mozzarella cheese shredded
- crackers for serving
Instructions
- Preheat oven to 350° F. and spray an 8x8 or similar size baking dish with cooking spray.
- Combine all of the ingredients in large bowl, reserving a little bit of the mozzarella cheese for topping the dip.
- Using a rubber spatula, fold everything together until it is completely combined.
- Pour the dip into the prepared baking dish and spread it out into an even layer. Top it with the remaining cheese. Bake the dip for 25-30 minutes or until bubbly and golden brown. Serve immediately with cracker or crostini.
