Ingredients

  • 1 baguette quartered
  • 2 tablespoons butter
  • 2 tablespoons extra-virgin olive oil
  • 1 onion finely chopped
  • 3 cloves garlic finely chopped
  • salt
  • black pepper
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 pinch nutmeg
  • spinach thawed and squeezed dry, frozen, two 10-ounce boxes
  • artichoke hearts thawed, frozen, 9-ounce box
  • 1/2 cup Parmigiano-Reggiano cheese grated
  • 2 cups mozzarella cheese shredded, or provolone cheese
  • 2 tablespoons thyme finely chopped fresh

Instructions

    Cup of Yum
  1. Preheat the oven to 400F. Arrange the bread, cut side up, on a baking sheet.
  2. In a medium skillet over medium heat, melt the butter and olive oil together. Add the onion and garlic and cook until translucent, about 5 minutes. Season with salt and pepper. Stir in the flour and cook for 1 minute. Whisk in the milk, then add the nutmeg. Cook until thickened.
  3. Pull the spinach apart, and add it to the thickened milk mixture, and then fold in the artichoke hearts. Stir in the parmigiano and season with more salt and pepper if needed. Remove from heat.
  4. Spread the spinach artichoke dip on the baguette and top with the mozzarella cheese. Bake in the preheated oven until the cheese is melted, 10 to 12 minutes. Top with the thyme.
