Ingredients

  • 8 ounces penne pasta uncooked, (2 cups dry
  • 2 tablespoons olive oil
  • 5 ounces spinach fresh, roughly chopped
  • 1 cup artichoke hearts marinated, roughly chopped
  • 8 ounces cream cheese
  • 1 tablespoon garlic powder
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 2 cups milk I used 2%
  • 1 cup mozzarella cheese shredded
  • ¼ cup Parmesan Cheese shredded

Instructions

  1. Start by cooking the pasta according to package instructions. 
  2. While the pasta is cooking, prepare the sauce. Add the olive oil to a large saucepan or Dutch oven and heat over medium heat.
  3. Add the spinach and cook until wilted. Add the artichoke hearts and cook for another minute.
  4. Add the cream cheese and stir until melted and there are no lumps. 
  5. Stir int he garlic powder, salt and pepper. Add the milk and cook, stirring occasionally until it comes to a boil.
  6. Stir in the mozzarella cheese then add the pasta and mix until the pasta is evenly coated.
  7. Sprinkle with Parmesan cheese and serve while warm.

Notes

  • Penne is used here, but any pasta shape can be substituted; adjust cooking times accordingly.
  • Non-dairy milk and vegan cheeses can replace dairy ingredients for dietary preferences.
  • Adding protein such as grilled chicken, shrimp, or chickpeas enhances dish substance.
  • Save some pasta water before draining to adjust sauce thickness during mixing or reheating.
  • Reheat leftovers gently, adding a little milk to restore creaminess if the sauce thickens.
