Spinach Avocado Smoothie with Mint
Superfood smoothie with spinach and avocado with a hint of peppermint extract can pass for a healthy shamrock shake!
Ingredients
- 1 cup milk I use an unsweetened almond & coconut blend, of your choice
- 1 vanilla protein powder adjust to the amount of protein you want to add, for serving
- 1 cup baby spinach loosely packed
- 1/2 avocado small
- 1/4 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- sweetener Stevia, coconut sugar, honey, xylitol optional, of your choice
- 1-2 cups ice
Instructions
- Add all ingredients into a blender and pulse until there are no chunks of ice. Enjoy!
Notes
- Adjust the protein powder to the amount of protein you prefer. Half of a serving of the brand I use is 12 grams of protein, a good amount for a snack or in between meal. For a meal replacement, I added the whole service of protein for 24 grams.
- For this recipe I added ice to get that cold frothy texture. I find that it adds bulk to the smoothie and the overall appearance is more appealing.
- Another way to get that same texture is to freeze the avocado. This method can be a little trickier if the avocado is exposed to air prior to freezing, which will darken and your smoothie will be a tan/brown color when blended.
