Spinach Mushroom Quinoa

This simple Spinach Mushroom Quinoa is a delicious clean eating side dish or even great as a meal in itself when you add chicken as well!

Ingredients

  • 1 cup of quinoa cooked per package
  • 2 tablespoon of coconut oil or olive oil
  • 4 cloves of garlic
  • 1 large onion chopped
  • 12 oz of mushrooms sliced
  • 16 oz of fresh spinach
  • 1 tablespoon of balsamic vinegar

Instructions

    Cup of Yum
  1. Cook quinoa per package directions
  2. Heat the oil in a large saute pan.
  3. Add garlic an onions and saute for about 5 minutes.
  4. Add the mushrooms and balsamic vinegar. Cook for about 10 minutes or until cooked down substantially.
  5. Then add the spinach and cover. Cook until wilted stirs often.
  6. Add the quinoa and toss to mix thoroughly.
  7. Serve hot.
  8. ENJOY!!
