Spinach Omelette

Ingredients

  • 2 large eggs
  • 1 cup fresh baby spinach
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • salt to taste
  • Black pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a bowl, beat the eggs with garlic powder, salt, and black pepper.
  2. Heat a teaspoon of olive oil in a pan over medium heat. Add the spinach and sauté until wilted, about 2 minutes. Remove from heat and set aside.
  3. Heat the remaining olive oil in a non-stick skillet over medium-low heat. Pour the beaten eggs into the skillet, allowing them to spread evenly.
  4. As the eggs begin to set, spoon the sautéed spinach and sprinkle Parmesan cheese over one half of the omelette.
  5. Fold the omelette in half over the filling. Cook for another 2-3 minutes until the cheese is melted and the eggs are cooked to your preference.
