Spinach Salad with Pomegranate Dijon Dressing Recipe Card

Spinach salad with raisins, almonds and tomatoes with a white balsamic, pomegranate dijon dressing. I love homemade salad dressings and this one is fabulous!

Ingredients

  • 5 oz spinach (1 bag)
  • 2 Tbsp raisins
  • 2 Tbsp almonds slivered
  • 1 roma tomatoes seeded, cored, and diced
Dressing
  • ¾ cup olive oil
  • ¼ cup white balsamic vinegar
  • 2 Tbsp pomegranate molasses
  • 1 Tbsp shallots minced finely
  • 1 tsp Dijon mustard
  • ½ tsp kosher salt
  • ⅛ tsp pepper

Instructions

  1. To make the dressing place all the ingredients in a bowl and whisk.
  2. Place tomatoes, almonds, and raisins in individual prep bowls.
  3. Place in the refrigerator until you are ready to use.
  4. To assemble the salad, wash the spinach thoroughly. Place in a bowl, then casually sprinkle the tomatoes, raisins and almonds, alternating to create a visually appealing dish.
