Ingredients
- 5 oz spinach (1 bag)
- 2 Tbsp raisins
- 2 Tbsp almonds slivered
- 1 roma tomatoes seeded, cored, and diced
Dressing
- ¾ cup olive oil
- ¼ cup white balsamic vinegar
- 2 Tbsp pomegranate molasses
- 1 Tbsp shallots minced finely
- 1 tsp Dijon mustard
- ½ tsp kosher salt
- ⅛ tsp pepper
Instructions
- To make the dressing place all the ingredients in a bowl and whisk.
- Place tomatoes, almonds, and raisins in individual prep bowls.
- Place in the refrigerator until you are ready to use.
- To assemble the salad, wash the spinach thoroughly. Place in a bowl, then casually sprinkle the tomatoes, raisins and almonds, alternating to create a visually appealing dish.
