Spinach-Tomato Pasta
What could be better than tasty and nutritious veggies mixed with your favorite pasta?
Ingredients
- 8 ounces whole wheat penne pasta or your preferred pasta
- 1 tablespoon olive oil
- 3 cloves garlic minced
- 2 cups grape tomatoes halved
- 1/4 teaspoon red pepper flakes optional, crushed
- 4 cups spinach roughly chopped, fresh
- salt to taste
- black pepper to taste
- 1/4 cup Parmesan Cheese grated
Instructions
- Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add halved grape tomatoes and crushed red pepper flakes, cooking until tomatoes are soft and bursting, about 6 minutes.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt and black pepper. Add the cooked pasta to the skillet, tossing to combine with the sauce. Sprinkle with grated Parmesan cheese before serving.
