Ingredients

  • 1 medium sweet potato raw, peeled
  • 2 tablespoons cornstarch (cornflour)
  • 1 tablespoon cooking oil plus extra for greasing
  • salt and pepper

Instructions

Oven Bake
    Cup of Yum
  1. Heat oven to 400°F (200°C) and lightly grease a baking tray with cooking oil.
  2. Thickly spiralise the sweet potatoes, or alternatively cut into thin strips.
  3. In a large bowl, gently toss the sweet potato with the cornflour. Add the oil and toss to coat.
  4. Spread it all onto the baking tray, taking care not to overcrowd it or the results won’t be crispy. Use another baking tray if necessary. You can also place them onto a wire rack on the baking tray to encourage air circulation.
  5. Bake for 20 minutes, turning the sweet potatoes halfway through and turning the trays. They will continue to crisp up after they come out of the oven.
  6. Serve hot, seasoned with salt and pepper.
Air Fryer
  1. Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
  2. While the air fryer is preheating, spiralize the sweet potatoes into thick spirals or cut them into thin strips.
  3. Place the spiralized sweet potatoes in a large bowl. Add the cornstarch and oil, tossing gently to coat evenly.
  4. Once the air fryer is preheated, lightly grease the air fryer basket with oil or use a non-stick cooking spray.
  5. Spread the spiralized sweet potatoes in a single layer in the air fryer basket, making sure they are not overcrowded.
  6. Cook the sweet potato fries in the air fryer for 15-20 minutes, shaking the basket halfway through to ensure even cooking.
  7. Check for desired crispiness. If needed, continue cooking for an additional 5 minutes.
  8. Once done, season the sweet potato fries with salt and pepper to taste.
  9. Serve hot and enjoy your crispy, air-fried spiralized sweet potato fries!

Notes

  • Serving suggestions
  • Try them with a sprinkling of cajun spice, Old Bay Seasoning or Baharat (Middle Eastern spice blend).
  • For dipping sauces, try these fries with homemade ketchup, tartar sauce or sriracha aioli.
  • Toss them in cornflour (cornstarch) to absorb the moisture.
  • Don't crowd them on the pan or they'll steam rather than bake.
  • For best results, use a cooking mesh, although a hot baking tray will work well too.
  • If spiralizing, make them thick as they'll shrink when cooking.
  • Make sure the oven is hot before cooking them.
  • They will continue to crisp up when out of the oven, so don't cook them too dark.
