Ingredients

  • 2-3 carrot extra large
  • 2 zucchini medium
  • 1 cup cabbage thinly chopped or shaved
  • 2-4 TBSP cilantro or to taste, fresh, chopped
  • 2-4 TBSP peanut chopped
  • 1-2 tsp sesame seeds toasted
  • 1 tsp chia seeds totally optional
  • salt to taste
  • black pepper to taste
SRIRACHA LIME DRESSING
  • 3 TBSP lime juice lemon juice works too!, fresh
  • ¼ cup extra virgin olive oil
  • ¼ cup white wine vinegar
  • 3 TBSP honey
  • 1 clove garlic smashed + minced
  • 1 tsp sriracha plus extra to taste
  • ¼ tsp salt

Instructions

    Cup of Yum
  1. Make your dressing by combining fresh citrus juice with vinegar, oil, honey, garlic, Sriracha, and salt in a mason jar. Screw lid on tight and shake well. Set aside. Feel free to adjust the amount of sweetness to taste, as it cuts the spice of the chili sauce.
  2. Peel your carrots. Chop the ends from your carrots and zucchini so they're blunt (this helps the spiralizer attach to the veggies easily) and spiralize into thin veggie noodles. For this recipe the bigger the carrots the better! If you can only find smaller ones, feel free to peel your carrots into thin ribbons using a veggie peeler.
  3. Grab your dressing and shake well. In a large bowl combine veggie noodles with cilantro (add a little, or a lot!) and cabbage and toss with half of the dressing.
  4. Divide salad into desired number of servings and top each with crushed peanuts, toasted sesame seeds, and chia seeds. Add any additional dressing to taste.
  5. If allowed to sit a little, the dressing soaks into the crunchy veggies a bit more and softens the salad just a tad. I kind of love it this way!
