Spirulina Energy Balls (dairy-free, gluten-free, nut-free)

Loaded with flavor and simple to whip up, these raw superfood, spirulina energy balls pack quite a punch! Made with protein-rich collagen, lots of healthy fats, and a nutrient-dense greens powder, these nut-free energy balls make a great snack.

Ingredients

  • 1 cup dates soaked in warm water for 20 minutes
  • ¼ cup collagen
  • 1 teaspoon spirulina powder or chlorella
  • 2 tablespoons coconut flour
  • ⅛ cup shredded coconut unsweetened
  • ⅛ cup hemp hearts
  • 2 tbs water use the water from soaking the dates
  • ⅓ cup dried blueberries

Instructions

  1. Soak the dates in warm water to make them easier to blend.
  2. In a powerful blender, blend the dates until a paste forms.
  3. Place the remaining ingredients in a large bowl.
  4. Add in the date paste and (using your muscles!) mix until combined. Add in the date water. You should have a sticky mess.
  5. Roll some coconut oil onto your hands (to prevent sticking) and line a tray with parchment paper.
  6. Using your hands, roll the mixture into balls (about 12-14)
  7. Place the balls on the parchment paper and place into the freezer for thirty minutes.
  8. When ready to eat, you can grab them right out of the freezer or let them thaw for a first minutes first.

Notes

  • Pantry Staples.
  • Make sure to soak the dates to make it easier on your food processor and so that they come out smooth.
  • Grease your hands with coconut oil to roll the balls as they are quite pretty much sticky dough. This prevents the spirulina balls from sticking to your hands and helps them hold together.
  • Use shredded coconut for the spirulina balls. Coconut flakes tend to make the balls too chunky and hard to hold together.
