Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 2 ribs celery, diced
  • 1 large carrot, peeled and chopped
  • 1 small yellow onion, diced (about ½ cup)
  • 2 teaspoons garlic, minced
  • 1 pound dried split peas, rinsed and sorted
  • 1 pound cooked ham, diced
  • 5 cups (40 ounces) chicken broth
  • 2 cups (16 ounces) water
  • ½ teaspoon dried thyme
  • ½ teaspoon kosher salt, or to taste
  • ½ teaspoon black pepper
  • fresh parsley, chopped for garnish
  • fresh thyme, for garnish

  1. In a large heavy-bottomed pot or Dutch oven, heat the olive oil and butter over medium heat until the butter is melted.
  2. Add the celery, carrot, and onion. Cook, stirring occasionally, until the vegetables have softened slightly, about 5 to 8 minutes. Add the minced garlic and cook for 1 additional minute.
  3. Stir in the split peas, ham, chicken broth, water, thyme, salt, and pepper. Increase the heat to medium-high and bring the mixture to a gentle boil.
  4. Reduce heat to medium-low. Simmer the soup uncovered for about 65-75 minutes, or until the peas are tender and the soup has thickened. Stir occasionally to prevent sticking.
  5. Serve warm, garnished with fresh parsley.
