Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1 pound dried split peas rinsed
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 6 cups low-sodium chicken broth
  • Optional: 1 cup diced ham from ham bone or added separately
  • salt and pepper, to taste

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  2. Add the rinsed split peas, bay leaf, thyme, and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook for 1 hour and 30 minutes, stirring occasionally.
  3. If using, add the diced ham and continue to simmer for another 15 minutes. Season with salt and pepper to taste. Remove the bay leaf before serving.
