Spooky Eyeball Pasta School Lunch
Eyeball pasta turns ordinary meatballs into a spooky halloween dish by adding fresh mozzarella and black olives and makes the best halloween night dinner ever! Turn this into a spooktacular lunch by adding a pumpkin peanut butter patch and an apple mummy to complete the halloween fun!

Ingredients
for eyeball pasta
- 1 cup pasta cooked according to package directions
- ½ cup marinara pasta sauce
- 4 oz fresh mozzarella balls or string cheese cut into rounds
- ¼ cup sliced black olives
- 4-6 meatballs cooked according to package directions

- 2 tablespoons peanut butter
- 2-3 baby carrots chopped
- celery cut into pieces
- 1 apple
- 2 Candy eyes optional
Instructions
for eyeball pasta
- Cook pasta according to package directions. Mix in marinara sauce to coat the pasta noodles. Heat meatballs according to package directions. Cut them in half after cooking and place them on top of the pasta and sauce.
- Cut mozzarella balls in half (or use string cheese cut into circles) and place on top of the meatballs. Then top with a sliced olive on each. You can heat this for a few seconds in the microwave to melt the meatballs, cheese and olives together. If using an oven, place under broiler for 1 minute.

- In one side compartment place about 1-2 tablespoons peanut butter. Cut a baby carrot into rounds. Place the carrot rounds in the peanut butter and top with a piece of celery, cut finely for the “pumpkin stems.”
- In second side compartment, place half of an apple that has been partly peeled with a veggie peeler to resemble a mummy. You can rub the bottom of the apple and peeled part with a lemon wedge to stop the browning. Add on candy eyes, using peanut butter to hold them in place.
