Spring Rolls

Ingredients

  • 1/2 Mango sliced into strips
  • 1 small cucumber sliced into strips
  • 1/2 carrot sliced into strips
  • 1 avocado sliced
  • mint leaves
  • 1 ounce rice vermicelli noodles
  • 4 heets rice paper

Instructions

  1. Wash and slice the vegetables.
  2. Cook the rice vermicelli noodles following the instructions on the package, then let them cool.
  3. Fill a large bowl with warm water and dip one piece of rice paper into the water for about 8-10 seconds, until it becomes soft and pliable.
  4. Place the softened rice paper on a clean surface and layer your ingredients in the center of it. Start with a few pieces of lettuce, followed by rice noodles, mint leaves, and other vegetables.
  5. Carefully fold the sides of the rice paper over the filling, then fold the bottom over the filling. Roll tightly to form a spring roll.
  6. Serve the spring rolls with a dipping sauce of your choice.
