- 2 tablespoons butter
- 2 zucchini medium, cut into ¼-inch slices
- 2 yellow summer squash yellow, cut into ¼-inch slices
- 1 onion minced
- ½ teaspoon sea salt
- ¼ teaspoon ground pepper
- 4 garlic cloves minced
- ¼ cup cream cheese
- 1 cup Ritz crackers crumbled, divided
- ½ cup cheddar cheese grated, divided
Instructions
- Preheat your oven to 450°F.
- In a large skillet over medium heat, melt the butter. Add zucchini, yellow squash, and onions. Season with salt and pepper. Cook, stirring occasionally, until the vegetables are crisp-tender, about 4-6 minutes. Stir in garlic and cook for an additional minute.
- Pour in the cream cheese and cook until the mixture thickens, about 3-5 minutes.
- Remove the skillet from the heat and stir in ½ cup of ritz crackers and ¼ cup of cheese. Transfer the mixture into a greased 11x7-inch or 2-quart baking dish. Sprinkle the remaining crackers and cheese over the top.
- Bake until the dish is golden brown, approximately 8-10 minutes. Let the casserole rest for a few minutes after baking to help it set before serving.
