Ingredients

  • 2 tablespoons butter
  • 2 zucchini medium, cut into ¼-inch slices
  • 2 yellow summer squash yellow, cut into ¼-inch slices
  • 1 onion minced
  • ½ teaspoon sea salt
  • ¼ teaspoon ground pepper
  • 4 garlic cloves minced
  • ¼ cup cream cheese
  • 1 cup Ritz crackers crumbled, divided
  • ½ cup cheddar cheese grated, divided

Instructions

    Cup of Yum
  1. Preheat your oven to 450°F.
  2. In a large skillet over medium heat, melt the butter. Add zucchini, yellow squash, and onions. Season with salt and pepper. Cook, stirring occasionally, until the vegetables are crisp-tender, about 4-6 minutes. Stir in garlic and cook for an additional minute.
  3. Pour in the cream cheese and cook until the mixture thickens, about 3-5 minutes.
  4. Remove the skillet from the heat and stir in ½ cup of ritz crackers and ¼ cup of cheese. Transfer the mixture into a greased 11x7-inch or 2-quart baking dish. Sprinkle the remaining crackers and cheese over the top.
  5. Bake until the dish is golden brown, approximately 8-10 minutes. Let the casserole rest for a few minutes after baking to help it set before serving.

Notes

  • Send DataSend Data
  • Slice the zucchini and summer squash evenly to ensure uniform cooking.
  • Don’t overcook the vegetables in the skillet; they should be crisp-tender to avoid becoming mushy in the oven.
  • Stir the cream cheese in thoroughly until the mixture is smooth and well combined.
  • Use freshly minced garlic for the best flavor, adding it just before the cream cheese to prevent burning.
  • Mix some of the cracker crumbs and cheese into the casserole for extra texture and flavor throughout the dish.
  • Keep an eye on the baking time; remove the casserole when the top is golden brown to avoid over-baking.
