Sriracha Salmon Quesadillas

Ingredients

  • 12 oz salmon cooked
  • 3 tablespoon sriracha hot sauce
  • lime juice juice of one lime
  • 2 tablespoon cilantro chopped, or parsley
  • 1 cup Monterey jack cheese grated
  • 8 flour tortilla 6"

Instructions

  1. In a bowl, combine salmon, lime juice, sriracha, and cilantro/parsley
  2. Heat grill to medium-high and oil lightly with cooking spray
  3. Place four of the tortillas on the grill and divide half the cheese evenly over each
  4. Divide the salmon mixture evenly over each tortilla.
  5. Divide the remaining cheese over the salmon on each tortilla
  6. Top each with the remaining tortillas
  7. Grill until the bottom tortilla is crisp and cheese is melted
  8. Carefully flip each tortilla and grill the other side as above
  9. Remove from heat, cut into halves or wedges and serve hot with salsa
