Starbucks Egg Bites (Copycat Recipe)

They're perfect for meal prep or an easy breakfast and are packed with almost 20 grams of protein per serving!

Ingredients
- 8 large eggs
- 1 cup full-fat (4%) cottage cheese
- 1 cup shredded cheese (Starbucks uses a combination of gruyère and Monterey Jack)
- 1 tablespoon cornstarch
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 3 pieces uncured bacon, cooked and crumbled
- Optional: couple of dashes of hot sauce
Instructions
- Position a rack in the middle of the oven and preheat to 300°F. Bring a kettle or pot of water to boil on the stove. Spray a 12-cup muffin tin with cooking spray.
- Blend the eggs, cottage cheese, shredded cheese, cornstarch, salt, pepper, and hot sauce in a blender or food processor until completely smooth.
- Place the muffin tin on a rimmed baking sheet. Pour the egg mixture into the cups, filling them about ¾ full. Sprinkle the bacon on top.
- Place the baking sheet on the middle rack of the oven. To create a steam bath. pour some of the boiling water into the baking sheet to reach about ½ inch up the sides of the muffin tin. Be careful not to pour water into the eggs.
- Bake 28-32 minutes, until eggs are set. Carefully remove the muffin tin from the oven and cool to room temperature. Then, unmold the egg bites (use an offset spatula or butter knife to loosen the sides, if needed).
- Store egg bites in an airtight container in the fridge or freezer.

This creates a steam bath that provides moisture and prevents the egg bites from drying out.
