Steak Tartare

Steak tartare is a French recipe of raw beef (or horse) meat, roughly chopped with a sharp knife, and complemented with condiments.

Ingredients

  • 5 oz. 150 g lean beef (rump steak, round steak, or tenderloin)
  • 1 teaspoon Worcestershire sauce 
  • 1 shallot (or scallion, grated)
  • 1 tablespoon capers , drained and crushed
  • 1 pinch chopped parsley
  • ½ teaspoon mustard , optional
  • 1 tablespoon extra-virgin olive oil
  • a few drops Tabasco , optional
  • 1 egg yolk
  • salt
  • Black (or white pepper, freshly ground)

Instructions

  1. On a large cutting board, chop the meat with a sharp knife.
  2. Season the meat with salt and pepper and then add the Worcestershire sauce. Mix.
  3. Then add all the other ingredients except the egg yolk and mix.
  4. Shape the meat into a ball, then arrange the beef tartare on a plate. For a better presentation, it is possible to use a cookie cutter for dressing.
  5. Make a cavity in the center, then place the raw egg yolk.
  6. Enjoy immediately.
