Ingredients
- 5 oz. 150 g lean beef (rump steak, round steak, or tenderloin)
- 1 teaspoon Worcestershire sauce
- 1 shallot (or scallion, grated)
- 1 tablespoon capers , drained and crushed
- 1 pinch chopped parsley
- ½ teaspoon mustard , optional
- 1 tablespoon extra-virgin olive oil
- a few drops Tabasco , optional
- 1 egg yolk
- salt
- Black (or white pepper, freshly ground)
Instructions
- On a large cutting board, chop the meat with a sharp knife.
- Season the meat with salt and pepper and then add the Worcestershire sauce. Mix.
- Then add all the other ingredients except the egg yolk and mix.
- Shape the meat into a ball, then arrange the beef tartare on a plate. For a better presentation, it is possible to use a cookie cutter for dressing.
- Make a cavity in the center, then place the raw egg yolk.
- Enjoy immediately.
