Steamed eggs are a popular traditional dish in China, where eggs are beaten, then mixed with hot water before being steamed.

Ingredients
- 1¼ cup hot water
- 3 large eggs (ideally about same volume as water)
- salt
- ¼ teaspoon ground white pepper
- ¼ teaspoon chicken bouillon granules (optional)
- 1 teaspoon sesame oil
- 1 teaspoon soy sauce
- 1 tablespoon fried garlic
- 1 stem of green onion , thinly sliced
Instructions
- Beat the eggs in a large bowl and slowly add the hot water.
- Add salt, chicken bouillon granules (optional), and white pepper and mix well.
- Strain the mixture to get rid of bubbles and imperfections before steaming.
- Pour the mixture back into the bowl, cover with a plastic wrap and place it gently in a bamboo steamer.
- Cover and steam on low heat for 10 minutes.
- Pour the sesame oil and soy sauce over the surface and place the fried garlic and green onion on top. Serve hot.

Notes
- Do not use high heat while steaming, or the texture will be coarse and not smooth.
- Slightly beat the eggs to prevent too much air from entering the mixture.
