Steamed Eggs

Steamed eggs are a popular traditional dish in China, where eggs are beaten, then mixed with hot water before being steamed.

Ingredients

  • 1¼ cup water hot
  • 3 egg ideally about same volume as water, large
  • salt
  • ¼ teaspoon ground white pepper
  • ¼ teaspoon chicken bouillon granules (optional)
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1 tablespoon garlic fried
  • 1 green onion thinly sliced, stem

Instructions

  1. Beat the eggs in a large bowl and slowly add the hot water.
  2. Add salt, chicken bouillon granules (optional), and white pepper and mix well.
  3. Strain the mixture to get rid of bubbles and imperfections before steaming.
  4. Pour the mixture back into the bowl, cover with a plastic wrap and place it gently in a bamboo steamer.
  5. Cover and steam on low heat for 10 minutes.
  6. Pour the sesame oil and soy sauce over the surface and place the fried garlic and green onion on top. Serve hot.

Notes

  • Do not use high heat while steaming, or the texture will be coarse and not smooth.
  • Slightly beat the eggs to prevent too much air from entering the mixture.
