Steel Cut Oats with Blueberries and Walnuts

This recipe also works very well with raspberries, apples, blackberries or peaches.

Ingredients

  • 1 c steel cut oats (such as McCann’s)
  • 1 c skim milk
  • 1 c water
  • 1 tsp vanilla
  • ½ tsp sea salt
  • ½ tbs cinnamon
  • 1 pinch nutmeg
  • 1 banana (thinly sliced)
  • 1 c blueberries
  • ¼ c walnuts (chopped)
  • ¼ c flax seed meal

Instructions

  1. In a medium sauce pot over medium heat, whisk together milk, water, vanilla, salt, cinnamon and nutmeg.
  2. When mixture starts to come to a boil, add steel cut oats and bring to a boil.
  3. Reduce heat to low and simmer 15 minutes.
  4. About 2 minutes prior to the end of the cooking time, add in banana, blueberries, walnuts and flax. Stir well and serve.
