Stewed Hearts of Palm [Recipe + Video] Palmito Guisado
Enjoy hearts of palm in a new and very flavorful way with this traditional Dominican palmito guisado dish. Quick and easy to make and a guaranteed success at the table.
Ingredients
- 2 tablespoons olive oil
- 1 red onion thinly sliced, large
- 1 red bell pepper thinly sliced
- 4 plum tomato diced
- 2 cans heart of palm 14 ounces each, liquid discarded and cut into slices
- ½ tablespoon garlic mashed
- 1 teaspoon oregano dry, ground
- ¼ teaspoon black pepper or more, to taste, freshly-cracked or ground
- 1 dozen green olives pitted
- 1 cup tomato sauce (or 3 tablespoons of tomato paste)
- 1 teaspoon salt (or more, to taste)
- parsley or cilantro to garnish, fresh
Instructions
1. Cook seasoning
- Heat a tablespoon of oil over medium heat in a large skillet.Cook and stir the onions until they turn translucent. Add the bell pepper, tomatoes, hearts of palm, garlic, oregano, black pepper, olives, and tomato sauce. Cook stirring until everything is heated through (about 2 minutes).
2. Cook palmito
- Add 2 cups [0.5 liters] of water. Cover and simmer until the vegetables are cooked through.Season with salt to taste.
3. Serving
- Remove from the stove, garnish with parsley, and serve.
Notes
- You can add some crushed Scotch bonnet pepper when you are sauteing the seasonings, or some hot sauce at the end. It's not a traditional touch, but it's my preference.
