Sticky garlic air fryer

Juicy sticky garlic air fryer chicken legs served with coconut rice and spicy cucumber salad is the perfect weeknight dinner.

Ingredients

  • 1 kg / 2lb chicken legs/chicken drumsticks
  • 4 tbsp soy sauce / tamari
  • 3 tbsp honey
  • 1 tbsp sesame oil
  • 4 garlic cloves crushed
  • 2 tbsp rice vinegar / lemon juice

Instructions

  1. Whisk together the marinade ingredients and pour over the chicken legs.
  2. The chicken can be marinated for up to 24 hours in the fridge but ideally allow to marinade for at least 20 minutes.
  3. Transfer the chicken to an air fryer basket, reserving the marinade.
  4. Cook the chicken at 200ºC/400ºF for 10 minutes.
  5. While the chicken is cooking, transfer the remaining marinade to a small saucepan and simmer for 5 minutes until reduced slightly.
  6. Brush the marinade over the chicken and cook for another 10 minutes until the chicken is cooked through and caramelized. 
  7. Brush the remaining marinade over the chicken then serve with coconut rice and salad.
